The Indigenous Kombucha
Thriving in the Far North Region, Kargasok is an artisanal beverage obtained through the aerobic fermentation of a sweetened tea base. It is functionally identical to the globally recognized kombucha, driven by a complex symbiotic culture of bacteria and yeast. It bridges the gap between health tonic and mild intoxicant.
Green or black tea leaves and sugar (typically 5g tea and 50g sugar per liter). The process requires a Symbiotic Culture of Bacteria and Yeast (SCOBY), or backslopping with mature Kargasok liquid.
A decoction or infusion of tea leaves is boiled and sweetened. Once cooled to 20°C, it is inoculated with the SCOBY. Acetic acid bacteria and various yeasts mutualistically metabolize the sucrose into organic acids over a two-week period, resulting in a low-pH, slightly acidic final product.
Tangy, sharp, and slightly sparkling. The complex metabolic process yields gluconic, citric, L-lactic, acetic, and malic acids. It is highly acidic with a typical pH of 3.41.
Kargasok is a testament to indigenous Cameroonian biochemical expertise. The microbiological matrix is dominated by Acetobacter and Gluconobacter genera working in harmony with various yeasts to create the characteristic cellulose pellicle.
Heavily prized for its rich concentration of B vitamins (B1, B2, B6, B12) and Vitamin C, it remains a vital source of both nutrition and subsistence income for rural producers in the Diamaré and Mayo-kani divisions.
It serves as a daily health tonic and is deeply embedded in the traditional diet of the northern Sahelian populations.
