Afofo

The Stronger Palm Wine

When Matango is allowed to ferment beyond the typical fresh consumption window, it transforms into Afofo — a notably stronger, more acidic variant. The extended fermentation allows wild yeasts to consume more sugars, producing higher alcohol content and a sharper, more complex flavor profile.

ABV (Alcohol by Volume) 6-10%
Low to moderate alcohol content

Ingredients

The same raffia palm sap as Matango, but allowed to undergo extended fermentation. The longer fermentation period allows wild yeasts to consume more sugars, naturally increasing the alcohol content.

Production Method

Afofo begins identically to Matango — raffia palm sap is collected in traditional gourds. However, instead of being consumed within 24 hours, the sap is deliberately allowed to ferment for several additional days. The extended fermentation dramatically changes the character of the beverage.

Taste Profile

Sharply acidic and highly effervescent compared to fresh Matango. The sweetness is almost entirely consumed by fermentation, leaving a tangy, sour profile with pronounced alcohol warmth. More robust and assertive than its fresh counterpart.

Tradition

The Connoisseur’s Palm Wine

While fresh Matango is widely enjoyed for its sweet, mild character, Afofo represents the choice of experienced drinkers who prefer a bolder, more complex beverage. The extended fermentation is both an economic necessity (preserving surplus sap) and a deliberate craft choice.

Afofo occupies a unique cultural niche — too strong for casual social drinking, it is typically reserved for seasoned drinkers and specific social occasions where its potency is appreciated.
